Focaccia marmolada
Resumen
Focaccia bicolor con pasta de aceituna negra y tomate seco.
Ingredientes
- 200gr wheat flour
- 100gr spelt flour
- 6gr salt
- 240ml water
- 2gr fresh yeast
- 14gr sweetener
- lots of olive oil
- 1 onion, sliced in rings
- 4 tbsp black olive paste
- 4 tbsp sun-dried tomato paste
Pasos
- Prepare two bowls and add each half of the amount of the flour and salt
- In a another two bowls mix each half of the yeast with sweetener and water and stir until yeast is diluted
- Fill each yeast mixture into one of the bowls with the flour and drizzle some oil on top
- Add the olive paste to one and the tomato paste to the other bowl and mix both well
- In a big bowl fill in both doughs by taking a spoon of each dough at a time to create the marble look
- Cover bowl and let rest for 8h
- Prepare a squared cake mold (20x30cm) with 4 tbsp olive oil
- Fill the dough into the mold with some more oil on top and stretch out dough to the corners and let rest for 1h
- 1/2h before baking preheat the oven to 250°C
- With your fingers poke some holes into the dough and drizzle olive oil on top
